The minimal intervention approach allows nature to do the heavy lifting before the grapes are hand-picked. Contact on the skins is extended allowing extractionb of the natural colour and tannin. Maturation in French oak is limited so it doesn't overwhelm the traditional Sangiovese, Cabernet Sauvignon and Merlot blend.
